Banana bread is delicious, healthy and the perfect way to use up overripe bananas using just a few basic ingredients from your kitchen cupboard. In this recipe, you’ll notice that this bread is much more similar to cake in terms of preparation and taste. However, just like bread, it can be sliced, toasted and buttered. Slice up and eat with butter whilst still warm and fresh from the oven for a luxurious and hearty snack.

 

Ingredients

 

4 overripe bananas, mashed

250g plain flour

200g sugar

75g melted butter

1 beaten egg

1 teaspoon vanilla seeds

1 teaspoon baking soda

 

Preheat your oven to gas mark 4 or 180C (160 with a fan oven) and using a little butter, grease a bread loaf tin that’s approximately 30×23 cm.

 

Mix the mashed bananas, butter, egg, sugar and vanilla in a large mixing bowl. Add the baking soda and salt. Next, add the flour a little at a time to prevent lumps from forming. Mix until smooth and pour into the baking tray. Bake for 1 hour. Allow to cool on a baking rack before cutting into slices and serving, still warm, with butter.

 

Any remaining banana bread can be wrapped in cling film and stored in the fridge for up to 1 week.

 

For some variety, or to use up different overripe fruits in your kitchen, try replacing banana with a similar amount of mashed berries, plums, peaches or pureed apples. Experiment by replacing vanilla with cinnamon or add a handful of chopped walnuts.
